Raising the Grilled Cheese Sandwich to Gourmet Status
I just finished reading Amy Scattergood’s article in the LA Times called Grilled Cheese Sandwich: Updating an American icon. WOW! She takes grilled cheese sandwiches to the gourmet level. One of her suggestions, on how to make the ultimate comfort food sandwich, is to use infused olive oils instead of butter. I’m having a V8 moment! I can’t believe I’ve never thought of that. What a great idea. I guess I’ve simply taken grilled cheese sandwiches for granted. I never gave a second thought to how to make them since I first learned, a looong time ago.
Amy talks about how, for many of us, grilled cheese sandwiches conjure up fond childhood memories. One of my favorites was visiting my Nona. I loved to watch her, with bated appetite, assemble the sandwich and then wrap it in aluminum foil. Then… the most fascinating part… she would iron the sandwich. So efficient. So brilliant! No extra heat in the kitchen. No pan or spatula to clean. And the best part was that it was served with a side order of love.
