		<description>Or you could try this recipe to make a vegan mayo (tastes just like real mayo to me!!) 

1 brick soft tofu
1 teaspoon salted herbs (or just sea salt)
1/4 teaspoon citric acid crystals (this helps naturally preserve the mayo, but if you don't have that then you can just use a teaspoon lemon juice)
2 tbsp olive oil

Mix it all up in a blender, add extra salt or citric acid/lemon juice to taste 
and if you want to mix it up and make it into a herbed mayo add the herbs of your choice and some fresh crushed garlic. 

It will be the same consistency and general taste of mayo, but much much healthier for you!</description>
